stuffed tomatoes

 

Drew decided that we should buy a gigantic bag of spinach because I had been bitching about how little a normal bad of spinach wields once steamed. This was all fine and good, but then I had a massive bag of spinach to contend with. 500 grams is an intimidating sized wad of spinach, if you've never seen it.

Fortunately I also had some huge tomatoes that were nice and hard the way all goods things should be, and I needed to eat them right away or find out if parrots like them and huck them out the window. So was born stuffed tomatoes!

 

 

Ingredients:

  • 1 - 500 g bag of spinach (prewashed)
  • 1 cup of bread crumbs
  • 1 - 425 g container of mushrooms
  • 4 eggs
  • 1 tbsps. of butter
  • 6 large tomatoes
  • shredded cheese
  • salt, pepper and basil to taste

 

Cut off the tops of the tomatoes and start scooping out the tomato goo. This is pretty easy if you have reasonably firm tomatoes. Threaten to throw tomato goo at your Significant Other if they don't do the dishes and then turn your tomatoes upsidedown to drain.

Preheat your oven to 350°F/160°C. In a large pot over medium heat, melt the butter and start frying up your sliced, oh so clean mushroom chunks. When they look about 75% of the size they were when you started, toss in the spinach and begin the shrinking process. Your spinach should be about 80% smaller and 20% darker. (I want someone to write me up an equation for spinach shrinkage versus colour darkening so that I have something concrete to put in here. If Mike and Emerson do not come up with something at the very least I will be terribly sad and only eat pizza from now on.)

Remove the pot from the stove and stir in the bread crumbs, eggs and spices.

Place the tomatoes on a non-stick cookie sheet and sprinkle the shredded cheese (shake on cheese also works here) on top. Put them in the oven for 25 minutes to a half an hour. One tomato, with a side salad, a small bit of chicken florentine or something similar will do you. I fed Drew and I three stuffed tomatoes each and we nearly killed ourselves trying to finish it.
