I had an unopened container of cottage cheese that was bordering on going bad and I wanted to do something interesting with it. I don't know what possessed me to try to do a dessert as I am the cursed of the dessert realm. I guess I was feeling pretty creative and lucky, so I gave it a shot.
I told Drew that he could name the dessert upon completion, and he named it a Kumppa after the screen saver he was looking at. It works. It's not a square, a brownie, a cake and definitely not a cookie... a Kumppa is born. This is a mixed fruit Kumppa, but we have decided that a pineapple or a banana Kumppa would likely do as well.

Ingredients:
- 1 can of evaporated milk 400 g
- 1 cup of flour
- 1 310 g container of cottage cheese
- 3 eggs
- 1 tsp. of baking powder
- 3 tbsps. of brown sugar
- 2 cans of mixed fruit 234 g each
- 1 tbsp. Of cinnamon
- 1/2 cup of instant oatmeal
Whisk together the eggs, evaporated milk, baking powder, brown sugar, flour and cinnamon until smooth. Then add the fruit and cottage cheese and stir it all together.
Preheat your oven to 410°F/210°C. Pour the dessert mulch into a nonstick baking pan about 8 x 8 inches, and sprinkle the oatmeal on the top completely covering the surface.
Bake in the oven for 40 - 50 minutes, until the top is crusty and sticking a knife in the Kumppa comes out mostly clean.
The nature of Kumppa is that the outside is pretty crusty and the inside is light and fluffy and a little pudding-esque. This might sound strange, but it's really quite good. We were pleasantly surprised since I made it up myself. I was expecting something particularly horrid. :)
